Io personalmente uso EasyPhp, solo per comodità, ma ne esistono, per sentito dire, anche di migliori.

apache2 è un po' più performante e supporta nativamente moduli tipo mod_deflate che prima invece dovevano essere compilati a parte (mod_gzip)
